Abstract

The floral diversity at the Brazilian northeastern region affords a honey production with different characteristics in agreement the place and the time of the year where they had been produced. The present work was developed with the objective to determine the physico-chemical parameters of Apis mellifera honeys fom Chapada do Araripe region, CE, Brazil. The analysis were carried out at the Laboratório de Apicultura of the Departamento de Entomologia , Fitopatologia e Zoologia Agrícola of the Escola Superior de Agricultura €œLuiz de Queiroz€, Universidade de São Paulo, in Piracicaba, State of São Paulo, Brazil. The following parameters were determined: total sugars, reducing sugars, apparent sucrose, moisture, hydroxymethylfurfural, proteins, ashes, pH, acidity, formaldehyde index, electrical conductivity, color and viscosity of 21 honey samples collected on November and December, 2001. The results indicate that the average values of the chemical characteristics of almost all samples are whitin the limits established by the Brazilian legislation.
