Abstract

This study was conducted at the Estações Experimentais de Nova Odessa e Andradina in the period 1980-81, to evaluate the carcass characteristics of feedlot finished intact males of Nelore, Canchim (Charolais x Zebu) and Santa Gertrudis breeds. It w observed that the Canchim and Santa Gertrudis breeds had heavier hot and chilled carcass weights than the Nelore breed. Canchim and Nelore had higher dressing percentages than Santa Gertrudis. A lower forequarter percentage was observed for Santa Gertrudis than Nelore, with Canchim being intermediate. On the other hand, Santa Gertrudis had a higher percentage of short plate, short ribs and flank (€œponta de agulha€) than Canchim and Nelore. The Canchim breed had the lowest kidney and pelvic fat percentage and the Santa Gertrudis breed the highest, with Nelore intermediate. Canchim had higher values for tom eye area and lower values for fat thickness than the others breeds. In general, Canchim was superior in relation to total boneless closely trimmed retail product and carcass yield characteristics.
