Abstract

The aim of this experiment was to verify the changes in fatty acids profile during lactation period of water buffaloes. The milk samples were collected monthly from 40 animals, from April to November of 2002 in five herds located at Sarapuí and Pilar do Sul, São Paulo, Brazil. Experimental design was randomly assigned with eight buffaloes per farm in split-plot on time scheme, in five farms. Data were analyzed using a multivariate technique of principal components (PRINCOMP procedure) of SAS. The principal components analysis was an efficient technique to explain the fatty acids variation in the buffaloes milk. Principal components 1 and 2 had explained 59% of the variation observed in the data. Fatty acids originated by "de novo" synthesis been grouped stronger, excepting C4:0. Fatty acids with odd and ramified chain had been grouped, explaining their common microbial origin. The increase in level of long chain fatty acids inhibited the fatty acids of microbial origin. The fatty acids C14:1c9 and C16:1c 9 correlated negatively with its precursor, C14:0 and C16:0. The fatty acids that depend on the enzyme Delta9- desaturase activity correlated positively. The correlation between the vaccenic acid and CLA (C18:2 c 9 t 11) acid was higher.
