Qualitative characteristics of the carcasses and meat of young bulls fed with different levels of concentrated in the diet

Abstract

With the objective of evaluate the qualitative and chemical characteristics of the carcass and the meat of young bulls finished in feedlot, kept in individual pens and fed with three levels of concentrated in the diet. The trial was carried out “Estação Experimental Fazenda Modelo do IAPAR”, Ponta Grossa, PR, Brazil. Eighteen crossbred Purunàx Canchim, with initial average weight of 278kg and 12 months of age were used. The diets were composed with corn silage, fed ad libitum, and the concentrates with 73% of corn grain, 25% of soybean meal and 2% of mineral mixture. The treatments consist of different levels of concentrate: 0.8, 1.1 and 1.4% of the live weight. The animals had been slaughtered at average age of 17 months. On the lefts half-carcass, the portion between the 10a and the 12a rib was removed and used for chemical and qualitative analyses. The percents of humidity (%), protein (%), ether extract (%) and ashes (%) of the meat were determined. The values of carcass conformation, marbling, texture, coloration, tenderness, juiceness and palatability were evaluated. It were not observed differences (P > 0,05) between the treatments for all variables, unless the juiciness, that was superior for the treatments with 1.1 and 1.4% of concentrate.
